Crayfish

Crayfish are much smaller, freshwater cousins of the lobster.

The crayfish lays eggs, but they don't need to be fertilized in order to hatch.

The species grow quickly and can reach sizes of 5in long.

Crayfish have good eyesight and can move each eye independently.

There are many types of crayfish in many colors eg black, red, pink, blue, grey, green, yellow and purple.

A female signal crayfish will lure her potential mates with her urine. Then, she makes them prove their mettle by beating her in a test of strength before she allows them to mate with her.

They swim rapidly backwards but can only walk forwards.

They can survive for hours out of water and can cross miles of ground.

In the US, they are cooked in a large pot with onions, garlic and sausage in a ‘crayfish bowl.’
